  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ¼ cup dark chocolate chips (optional)
  • ¼ cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together 1 cup pumpkin puree, ⅓ cup maple syrup, 1 large egg, and 2 tablespoons melted coconut oil until smooth and glossy.
  3. Stir in 2 cups old-fashioned oats, 1 teaspoon cinnamon, ½ teaspoon pumpkin pie spice, 1 teaspoon baking powder, and ¼ teaspoon salt. Mix until evenly coated. The batter will be thick and slightly sticky.
  4. If using mix-ins (chocolate chips, nuts, or dried fruit), fold them in gently.
  5. Using a 2-tablespoon cookie scoop, portion the batter onto the prepared baking sheet, leaving about 2 inches between each cookie. Gently flatten each scoop with the back of a spoon to about ½-inch thickness.
  6. Bake for 12-14 minutes, until the edges are set and the cookies are slightly firm to the touch. Do not overbake.
  7. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a cooling rack to cool completely. They will firm up as they cool.

Notes

If batter looks too dry, add 1-2 tablespoons of milk (dairy or non-dairy). If too wet, add an extra tablespoon of oats. Do not skip parchment paper. Flatten cookies before baking. Let cool completely for best texture. Cookies can be frozen for up to 3 months.
