This healthy zucchini bread with walnuts and cinnamon is tender, moist, and perfectly sliceable. Made with applesauce and maple syrup, it’s a lighter version that doesn’t sacrifice flavor or texture.

  • 1 ½ cups grated zucchini (about 1 medium zucchini)
  • ⅓ cup unsweetened applesauce
  • ¼ cup melted coconut oil (or vegetable oil)
  • ½ cup pure maple syrup
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1 ¾ cups white whole wheat flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 2 teaspoons ground cinnamon
  • ½ teaspoon salt
  • ½ cup chopped walnuts, toasted

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving overhang on the long sides.
  2. Prepare the zucchini: Grate zucchini using the large holes of a box grater. Place shreds in a clean kitchen towel and squeeze out excess moisture. Set aside.
  3. Toast the walnuts: Place chopped walnuts in a dry skillet over medium heat. Stir for 3-4 minutes until fragrant. Pour onto a plate to cool.
  4. Mix wet ingredients: In a large bowl, whisk together applesauce, melted coconut oil, maple syrup, eggs, and vanilla extract until smooth.
  5. Mix dry ingredients: In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.
  6. Combine: Pour dry ingredients into wet ingredients. Fold gently with a rubber spatula until just combined. Do not overmix.
  7. Fold in zucchini and walnuts: Add squeezed zucchini and toasted walnuts. Fold gently until evenly distributed.
  8. Bake: Pour batter into prepared loaf pan. Bake for 45-55 minutes, until a toothpick inserted in center comes out clean. If browning too quickly, tent with foil after 35 minutes.
  9. Cool: Let bread cool in pan for 15 minutes, then use parchment sling to transfer to a wire rack. Cool completely before slicing.

Notes

Squeeze zucchini well to avoid soggy bread. Do not overmix batter. Let bread cool completely before slicing for best texture. Bread tastes even better the next day.
