Instructions

  1. Pick bright yellow dandelion petals from a clean, pesticide-free area. Avoid green parts. Rinse gently and drain.
  2. In a large pot, combine petals with 4 cups water. Bring to a simmer over medium heat, then reduce to low and steep for 30 minutes.
  3. Strain the mixture through a fine mesh strainer or cheesecloth into a bowl, pressing lightly to extract liquid. Discard petals.
  4. Measure 4 cups of the dandelion infusion and return to the pot. Add lemon juice and stir in the pectin. Bring to a boil over high heat, stirring constantly.
  5. Add sugar all at once and stir vigorously. Return to a full rolling boil and cook for 1-2 minutes, stirring continuously. Add butter if using to reduce foam.
