  • 68 bone-in, skin-on chicken thighs
  • 1/4 cup honey
  • 45 garlic cloves, minced
  • 2 teaspoons fresh thyme, chopped
  • 2 teaspoons fresh rosemary, chopped
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon lemon juice

Instructions

  1. Pat the chicken thighs dry with paper towels to ensure crispy skin. Season both sides generously with salt and black pepper. Let rest at room temperature for about 15 minutes.
  2. In a mixing bowl, whisk together honey, minced garlic, chopped thyme, rosemary, parsley, olive oil, and lemon juice until combined. Set aside some glaze for basting.
  3. Preheat grill or grill pan to medium heat (about 375°F). Lightly oil the grill grates or pan to prevent sticking.
  4. Place chicken thighs skin-side down on the grill. Cook for 6-7 minutes until skin is crispy and charred. Flip and grill the other side for 5-6 minutes. During the last 3 minutes, baste the chicken with the herb glaze every minute to build a sticky coating.
  5. Check for doneness with a meat thermometer; internal temperature should reach 165°F. Remove from grill and let rest for 5 minutes before serving.

Notes

Dry the chicken skin thoroughly for crispiness. Use medium heat to avoid burning the honey glaze. Baste the glaze during the last few minutes of grilling to prevent burning. Let the chicken rest after grilling to lock in juices. If flare-ups occur, move chicken to a cooler part of the grill.
