A cozy, comforting casserole featuring creamy mashed potatoes layered with crispy bacon, sharp cheddar cheese, and green onions. Perfect for quick, satisfying dinners or gatherings.

  • 4 cups (900g) mashed potatoes (homemade or store-bought)
  • 8 slices bacon, cooked and crumbled
  • 2 cups (200g) shredded sharp cheddar cheese
  • 3 green onions, thinly sliced
  • 1/2 cup (120ml) sour cream (or Greek yogurt)
  • 4 tablespoons (60g) butter, melted
  • 1 teaspoon garlic powder
  • Salt and black pepper, to taste
  • Optional toppings: crispy fried onions, extra cheese, chopped chives, diced jalapeños

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the bacon in a skillet over medium heat until crisp, about 8 minutes. Drain on paper towels and crumble into bite-sized pieces.
  3. If using leftover mashed potatoes, stir to loosen. If making fresh, peel and boil 2 pounds (900g) russet potatoes until tender (15-20 minutes), then mash with melted butter, sour cream, garlic powder, salt, and pepper.
  4. Spread half the mashed potatoes evenly in the bottom of a 9×13 inch baking dish.
  5. Sprinkle half the crumbled bacon and 1 cup (100g) shredded cheddar cheese over the potatoes.
  6. Add a layer of sliced green onions.
  7. Spread the remaining mashed potatoes on top, then sprinkle the rest of the bacon and cheese. Optionally add pats of butter or a sprinkle of garlic powder.
  8. Bake uncovered for 25-30 minutes until cheese is melted and bubbly and edges start to brown.
  9. Let rest for 5 minutes before serving to allow the casserole to set.

Notes

Do not overmix mashed potatoes to keep them fluffy. Cook bacon crisp but not burnt. Layer toppings between potato layers for best texture. Rest casserole before serving to help it set. For extra crispiness, broil 1-2 minutes at the end but watch carefully to avoid burning. Can prepare ahead and refrigerate up to 24 hours before baking.
