  • 3 large ripe bananas, mashed (about 1 ½ cups or 340g)
  • ½ cup unsalted butter, melted (113g)
  • ¾ cup granulated sugar (150g)
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour (190g)
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon (optional but highly recommended)
  • 1 cup walnut halves or pieces, roughly chopped (100g)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your 9×5-inch loaf pan or line it with parchment paper, leaving some overhang on the sides for easy lifting.
  2. Mash the bananas: In your large mixing bowl, add the ripe bananas. Mash them with a fork or potato masher until they’re mostly smooth with a few small lumps. Set aside.
  3. Add the wet ingredients: Pour in the melted butter, granulated sugar, eggs, and vanilla extract. Stir everything together with your wooden spoon until combined.
  4. Mix the dry ingredients: Add the flour, baking soda, salt, and cinnamon directly into the same bowl. Stir gently until just combined, with a few streaks of flour remaining.
  5. Fold in the walnuts: Add the chopped walnuts to the batter. Fold them in with 3-4 gentle strokes until evenly distributed.
  6. Pour into the pan: Scrape the batter into your prepared loaf pan. Spread it evenly with your spatula. Tap the pan gently on the counter a couple times to release any air bubbles.
  7. Bake: Place the pan in the preheated oven. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean or with just a few moist crumbs. If the top is browning too quickly after 40 minutes, tent it loosely with aluminum foil.
  8. Cool: Let the bread cool in the pan for 10 minutes. Then lift it out using the parchment paper and transfer to a cooling rack. Let it cool completely before slicing—about 1 hour.

Don’t overmix the batter—stir until flour just disappears. Toast walnuts first for better flavor and crunch. Use the spoon-and-level method for flour. Let bread cool completely before slicing for clean slices. Bread tastes even better on day two.
