  • 4 filet mignon steaks, about 6 ounces (170g) each, trimmed of excess fat
  • 8 slices thin-cut bacon
  • 4 tablespoons unsalted butter, softened
  • 2 ounces blue cheese, crumbled
  • 1 clove fresh garlic, minced
  • 1 teaspoon fresh thyme or rosemary, finely chopped (optional)
  • Salt and freshly cracked black pepper, to taste
  • 1 tablespoon olive oil or canola oil

Instructions

  1. Prepare the Blue Cheese Butter: In a small bowl, combine 4 tablespoons softened unsalted butter, 2 ounces crumbled blue cheese, minced garlic, and chopped thyme or rosemary if using. Mix well until creamy but still slightly chunky. Set aside or refrigerate for 10 minutes to firm up.
  2. Wrap the Filets: Pat the filet mignon steaks dry with paper towels. Season both sides generously with salt and freshly cracked black pepper. Wrap each filet with two slices of bacon, securing the ends with toothpicks if necessary.
  3. Preheat the Skillet: Heat 1 tablespoon oil in a cast iron skillet over medium-high heat until shimmering but not smoking.
  4. Sear the Steaks: Place the bacon-wrapped filets in the skillet, cooking for about 2–3 minutes per side until the bacon is nicely crisped and the steak has a golden crust. Use tongs gently to avoid piercing the meat.
  5. Finish in the Oven: Transfer the skillet to a preheated oven at 400°F (200°C). Roast for 5–7 minutes for medium-rare (internal temperature around 130°F/54°C). Adjust time for preferred doneness.
  6. Rest the Steaks: Remove from oven and transfer filets to a plate. Tent loosely with foil and let rest for 5 minutes.
  7. Plate and Serve: Top each filet with a generous dollop of blue cheese butter while still warm.

Notes

Pat steaks dry before searing to get a good crust. Use thin-cut bacon for crispiness. Rest steaks after cooking to keep them juicy. Blue cheese butter can be made ahead and refrigerated. Avoid overcrowding the pan during searing.
