  • 2 cinnamon sticks (plus extra for garnish)
  • 4 whole star anise
  • 6 whole cloves
  • 1 teaspoon whole allspice berries
  • 1 vanilla bean (split lengthwise, or 1 teaspoon vanilla extract)
  • 1 orange (sliced into rounds)
  • 2 tablespoons brown sugar (optional)
  • 1 tablespoon maple syrup
  • 23 bottles Prosecco or dry sparkling wine (chilled)
  • 1/4 cup caramel sauce
  • 1/4 cup cinnamon sugar (1/4 cup granulated sugar + 1 tablespoon ground cinnamon)
  • 1/4 cup crushed graham crackers or vanilla wafers
  • 1/4 cup dried apple chips
  • Fresh rosemary sprigs
  • Additional cinnamon sticks
  • 1/4 cup bourbon or rye whiskey (optional)
  • 1/4 cup apple brandy or Calvados (optional)

Instructions

  1. Pour the apple cider into a slow cooker. Add cinnamon sticks, star anise, cloves, allspice berries, split vanilla bean, orange slices, brown sugar, and maple syrup. Set slow cooker to low and simmer for at least 2 hours (3-4 hours preferred).
  2. Before serving, ladle the cider through a fine-mesh strainer or cheesecloth into a clean container to remove whole spices and orange slices. Return strained cider to the slow cooker and keep on warm.
  3. Pour a thin layer of caramel sauce onto a small plate. On another plate, spread cinnamon sugar or crushed graham crackers. Dip the rim of each champagne flute into the caramel sauce, then gently press into the cinnamon sugar or graham cracker crumbs. Let set for a few minutes.
  4. Set out small bowls with garnishes: dried apple chips, fresh rosemary sprigs, extra cinnamon sticks, and any additional toppings. Place bourbon or apple brandy in small bottles or a decanter. Arrange everything on a wooden board or tray near the slow cooker. Keep champagne bottles in an ice bucket.
  5. When ready to serve, have guests ladle about 2-3 ounces of warm spiced cider into a rimmed flute. Top with 3-4 ounces of chilled Prosecco or sparkling wine. Add a splash of bourbon or brandy if desired. Garnish with a cinnamon stick, dried apple slice, or rosemary sprig. Serve immediately.

Notes

Do not boil the cider; a gentle simmer is best. Chill champagne properly to maintain bubbles. Strain the cider ahead of time to remove whole spices. Let guests build their own drinks for a fun experience. Keep extra Prosecco and cider on hand.
