Instructions

  1. Mix dry ingredients: In a medium bowl, whisk together 2 ¾ cups (345 g) all-purpose flour, 1 teaspoon baking powder, and ½ teaspoon salt. Set aside.
  2. Cream butter and sugar: In a large bowl, use an electric mixer to beat 1 cup (226 g) softened unsalted butter and 1 cup (200 g) granulated sugar until light and fluffy, about 3-4 minutes.
  3. Add egg and vanilla: Beat in 1 large room temperature egg, 1 ½ teaspoons vanilla extract, and optionally ¼ teaspoon almond extract until combined.
  4. Combine wet and dry: Gradually add the dry ingredients to the wet mixture, mixing on low speed or folding gently with a spatula until just combined. The dough should be soft but not sticky.
  5. Chill the dough: Wrap the dough in plastic wrap and refrigerate for at least 1 hour or up to overnight.
  6. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
