  • 1 fully cooked bone-in ham (6 to 8 pounds), spiral sliced or whole shank
  • ½ cup (120 ml) honey
  • 1 cup (200 g) packed dark brown sugar
  • ½ cup (120 ml) canned unsweetened pineapple juice
  • 1 cup (about 165 g) pineapple chunks, drained (canned or fresh)
  • 1 tablespoon (15 ml) Dijon mustard
  • 1 teaspoon (2 g) ground cloves
  • ½ teaspoon (1 g) ground cinnamon
  • 2 tablespoons (30 g) melted butter
  • Optional: Maraschino cherries for garnish
  • Optional: Whole cloves to stud the ham

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Score the ham’s surface with crisscross cuts about ¼ inch deep across the fat.
  3. Place the ham fat side up on a roasting rack in a roasting pan. Insert a meat thermometer into the thickest part, avoiding bone.
  4. In a medium bowl, whisk together honey, brown sugar, pineapple juice, melted butter, Dijon mustard, ground cloves, and cinnamon until smooth and glossy.
  5. Brush the ham with half the glaze. Cover loosely with aluminum foil and roast for about 1 hour and 30 minutes (15 minutes per pound), basting every 20 minutes with the remaining glaze.
  6. During the last 30 minutes, remove the foil. Baste once more and let the glaze caramelize to a sticky amber finish.
  7. Optional: In the final 15 minutes, skewer pineapple chunks and maraschino cherries onto the ham for garnish.
  8. Check the internal temperature; it should reach 140°F (60°C). Remove from oven and tent with foil. Let rest for 15 minutes before slicing.

Notes

Score the ham to help glaze penetrate and create a diamond pattern. Use a meat thermometer to avoid overcooking. Baste gently and often. Keep foil loose to trap moisture but remove near the end for caramelization. Rest ham before slicing to retain juices. Glaze can be prepared up to 24 hours ahead and warmed if thickened.
