  • 1 tablespoon dried culinary lavender buds
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • Optional: powdered sugar for dusting

Instructions

  1. Take the unsalted butter out of the fridge about 30 minutes before baking so it softens to room temperature.
  2. Preheat your oven to 325°F (160°C). Line a baking sheet with parchment paper or a silicone mat.
  3. In a large mixing bowl, beat 1 cup (227g) softened unsalted butter with ½ cup (100g) granulated sugar and ¼ cup (85g) honey until light and fluffy, about 3–5 minutes.
  4. Mix in 1 teaspoon vanilla extract and 1 tablespoon dried culinary lavender buds gently.
  5. In a separate bowl, whisk together 2 cups (250g) all-purpose flour and ¼ teaspoon salt.
  6. Gradually add the flour mixture to the butter mixture in 2–3 additions, mixing on low speed or folding with a spatula until dough holds together. If too dry, add a teaspoon of honey or splash of milk.
  7. Turn dough onto plastic wrap, shape into a flat disk, wrap tightly, and chill in fridge for at least 30 minutes.
  8. Roll out chilled dough on lightly floured surface to about ¼-inch (6mm) thickness. Cut into shapes with cookie cutter or knife, or press into pan and slice into squares.
  9. Place cookies 1 inch apart on prepared baking sheet. Bake at 325°F (160°C) for 18–22 minutes until edges start to turn golden and centers look set but pale.
  10. Transfer cookies to cooling rack immediately after baking. Once cool, dust with powdered sugar if desired.

Notes

Use culinary lavender only to avoid bitterness. Chill dough thoroughly to prevent spreading. Avoid overmixing after adding flour to keep cookies tender. Use mild honey to let lavender shine. For gluten-free, substitute almond flour but expect a softer texture. Optional powdered sugar dusting adds elegance.
