A quick and easy homemade pumpkin spice coffee syrup that adds a cozy fall flavor to your morning brew without the fuss or extra calories of café drinks.

  • 1 cup water (240 ml)
  • 1 cup granulated sugar (200 g)
  • 1/2 cup pumpkin puree (120 g)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • 1 teaspoon pure vanilla extract

Instructions

  1. In a small saucepan, combine 1 cup water and 1 cup granulated sugar. Whisk over medium heat until the sugar dissolves, about 3-5 minutes.
  2. Stir in 1/2 cup pumpkin puree, 1 teaspoon ground cinnamon, 1/2 teaspoon ground nutmeg, 1/4 teaspoon ground cloves, and 1/4 teaspoon ground ginger. Whisk well to combine.
  3. Lower heat to medium-low and simmer the syrup for about 10 minutes, stirring occasionally until it thickens slightly to a light honey consistency. Adjust thickness by adding water or simmering longer if needed.
  4. Remove from heat and stir in 1 teaspoon pure vanilla extract.
  5. Let the syrup cool for about 15 minutes, then strain through a fine mesh sieve into a clean jar to remove solids (optional).
  6. Seal the jar and refrigerate. Use 1 tablespoon or more per coffee, adjusting to taste.

Notes

Use fresh spices for best flavor. Avoid pumpkin pie filling as it is sweetened and spiced. Straining is optional but recommended for smooth texture. If syrup crystallizes in fridge, warm gently before use. Can substitute brown sugar for deeper flavor or reduce sugar and add maple syrup or honey for sweetness variation.
