These quick birthday cake blondies are soft, chewy, and studded with rainbow sprinkles for a nostalgic birthday cake flavor. Made in under 30 minutes with simple pantry ingredients, they’re the perfect weeknight dessert or last-minute treat.

  • 1 cup (200g) light brown sugar, packed
  • ¼ cup (50g) granulated sugar
  • 1 large egg, at room temperature
  • 2 teaspoons vanilla extract
  • 1 cup (120g) all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup rainbow sprinkles (jimmies), plus more for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving some overhang on two opposite sides.
  2. Melt the butter in a microwave-safe bowl in 30-second bursts. Let cool for 2 minutes.
  3. In a medium mixing bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth and well combined.
  4. Add the egg and vanilla extract. Whisk vigorously for about 30 seconds until smooth, glossy, and slightly thickened.
  5. Add the flour, baking powder, and salt. Fold gently with a rubber spatula or wooden spoon until just combined. Do not overmix.
  6. Gently fold in ½ cup of rainbow sprinkles using as few strokes as possible.
  7. Scrape the batter into the prepared pan and spread evenly. Sprinkle an extra tablespoon of sprinkles on top.
  8. Bake for 18-22 minutes, until edges are golden brown and pulling away from the sides. The center should look slightly underbaked and puffy. A toothpick inserted in the center should come out with a few moist crumbs.
  9. Cool completely in the pan on a cooling rack for at least 20 minutes. Use the parchment handles to lift the blondies out, then transfer to a cutting board.
  10. Slice into 9 or 16 squares and serve.

Notes

Use rainbow jimmies (rod-shaped sprinkles) not nonpareils to prevent color bleeding. Let butter cool before adding egg to avoid scrambling. Check for doneness at 18 minutes; center should look slightly underbaked. Cool completely before cutting for clean slices. Store in an airtight container at room temperature for up to 4 days. Freeze individual squares wrapped in plastic wrap for up to 3 months.
