Ingredients

Scale
  • 6 medium apples (about 2 pounds or 900g), peeled, cored, and sliced into ¼-inch thick pieces
  • 3 tablespoons granulated sugar (36g)
  • 2 tablespoons light brown sugar (24g), packed
  • 1 tablespoon lemon juice (15ml)
  • 1 teaspoon vanilla extract (5ml)
  • 1 tablespoon cornstarch (8g)
  • 1 teaspoon ground cinnamon (2.6g)
  • ¼ teaspoon ground nutmeg (0.5g)
  • Pinch of salt
  • ½ cup unsalted butter (1 stick or 113g)
  • ¾ cup old-fashioned rolled oats (67g)
  • ¾ cup all-purpose flour (90g)
  • ½ cup light brown sugar (100g), packed
  • ¼ cup granulated sugar (50g)
  • ½ teaspoon ground cinnamon (1.3g)
  • ¼ teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Position a rack in the center.
  2. Make the brown butter: Place the stick of butter in a medium saucepan over medium heat. Let it melt completely, then keep cooking, swirling occasionally, until it foams, the foam subsides, and little brown specks appear at the bottom (about 5-7 minutes). When it smells nutty and turns golden-amber, pour it into a heatproof bowl immediately.
  3. Prepare the apple filling: In a large bowl, toss the sliced apples with granulated sugar, brown sugar, lemon juice, vanilla, cornstarch, cinnamon, nutmeg, and a pinch of salt. Let sit while you make the topping.
  4. Make the oat crumble: In a medium bowl, whisk together the oats, flour, brown sugar, granulated sugar, cinnamon, and salt. Pour the still-warm brown butter over the dry ingredients and stir with a fork until clumpy and evenly moistened.
  5. Assemble the crisp: Pour the apple mixture into a greased 8×8-inch baking dish. Spread evenly. Sprinkle the oat crumble evenly over the top without pressing down.
  6. Bake: Place the dish on a baking sheet and bake for 35-40 minutes, until the filling is bubbling around the edges and the topping is golden brown. If the topping browns too quickly, tent loosely with foil for the last 10 minutes.
  7. Cool slightly: Let the crisp rest on a cooling rack for at least 15 minutes before serving.

Notes

Don’t walk away from browning butter; it goes from perfect to burnt in about 30 seconds. Use cold butter straight from the fridge for better control. Let the apples macerate for 10 minutes to draw out juices. Make extra crumble and freeze for a quick dessert later. Check doneness with a knife; it should slide through an apple slice with little resistance. Cut apples to ¼-inch thickness for even cooking.
