  • 1 cup (200g) brown sugar, packed (dark brown sugar preferred)
  • 1 cup (240ml) water
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • 1 teaspoon vanilla extract
  • Optional pinch of salt

Instructions

  1. In a small saucepan, whisk together ½ cup pumpkin puree and 1 cup water until smooth to thin out the pumpkin (about 1-2 minutes).
  2. Stir in 1 cup brown sugar, 1 teaspoon cinnamon, ½ teaspoon nutmeg, ¼ teaspoon cloves, and a pinch of salt if using. Mix well (1 minute).
  3. Place the pan over medium heat and bring to a gentle simmer, stirring frequently until the sugar dissolves and the mixture starts to thicken (5-7 minutes).
  4. Reduce heat to low and simmer gently, whisking often, until the syrup thickens slightly and coats the back of a spoon, aiming for a texture thinner than honey but thicker than water (3-5 minutes).
  5. Remove from heat and stir in 1 teaspoon vanilla extract to add depth and round out the flavors.
  6. Let the syrup cool completely in the pan (about 15 minutes), then transfer to a clean glass jar or bottle. Store in the refrigerator for up to 2 weeks.
