  • 1 cup milk (dairy or unsweetened almond milk)
  • ½ cup plain Greek yogurt
  • 2 tablespoons chia seeds
  • 1 tablespoon maple syrup or honey
  • ½ teaspoon vanilla extract
  • Pinch of salt
  • 1 cup mixed berries (fresh or frozen)
  • 1 tablespoon chia seeds (for berry layer)
  • 1 teaspoon lemon juice
  • Extra fresh berries (for topping, optional)
  • 1 tablespoon chopped nuts or seeds (for topping, optional)
  • A drizzle of nut butter (for topping, optional)

Instructions

  1. Make the berry compote layer first. In a small bowl, combine 1 cup of berries (frozen or fresh) with 1 tablespoon of chia seeds and 1 teaspoon of lemon juice. Stir well. Let it sit for 5 minutes while you prepare the oat base.
  2. Mix the oat base. In a separate bowl or directly in your jar, combine 1 cup rolled oats, 1 cup milk, ½ cup Greek yogurt, 2 tablespoons chia seeds, 1 tablespoon maple syrup, ½ teaspoon vanilla, and a pinch of salt. Whisk vigorously for about 30 seconds.
  3. Layer it up. Spoon half of the oat mixture into your jar. Top with half of the berry compote. Repeat with the remaining oat mixture and berry compote. Leave about ½ inch of space at the top of the jar.
  4. Seal and refrigerate. Put the lid on your jar and give it a gentle shake to settle everything. Place it in the refrigerator for at least 4 hours, but overnight is best.
  5. Check the consistency in the morning. When you take it out, give it a stir. It should be thick but still spoonable—like a loose pudding. If it’s too thick, stir in a splash of milk. If it’s too thin, let it sit for another hour.
  6. Add toppings and serve. Top with fresh berries, a sprinkle of nuts, and a drizzle of nut butter if desired. Eat cold or let it sit at room temperature for 10 minutes.

Notes

For best texture, use old-fashioned rolled oats, not steel-cut or instant. Mix chia seeds into liquid first to avoid clumps. The oats taste even better on day two. Store in the fridge for up to 5 days; do not freeze.
