  • 1 tablespoon honey
  • 4 ounces sharp cheddar cheese, sliced or cubed
  • 4 ounces smoked gouda, sliced
  • 4 ounces thinly sliced salami (or summer sausage)
  • 2 ounces prosciutto (optional)
  • 1/2 cup dill pickles (cornichons or baby gherkins)
  • 1/4 cup pickled red onions
  • 1 small apple, sliced (Granny Smith or Honeycrisp)
  • A handful of radishes, thinly sliced
  • Fresh parsley or chives, chopped (for garnish)

Instructions

  1. Warm the pretzels: Wrap store-bought soft pretzels in a damp paper towel and microwave for 30-45 seconds, or until warm and soft. Alternatively, place on a baking sheet in a 350°F oven for 5-7 minutes.
  2. Brush with butter: Once warm, brush the pretzels with melted butter. Sprinkle with a pinch of coarse sea salt if desired.
  3. Prepare the mustards: In a small bowl, mix whole-grain mustard with honey until well combined. Spoon into a small ramekin. In another ramekin, add spicy brown mustard.
  4. Slice the cheese and meats: Cut cheddar and gouda into thin slices or small cubes (about 1-inch pieces). Fold salami slices into quarters or roll into cones. Tear prosciutto into bite-sized pieces.
  5. Prepare the accompaniments: Slice apple into thin wedges (toss with lemon juice to prevent browning if making ahead). Thinly slice radishes. Drain pickles and pickled onions.
  6. Assemble the board: Place warm pretzels in the center of a wooden cutting board or large serving platter. Arrange small bowls of mustard around them. Fan out cheese slices on one side and pile meats on the other. Fill gaps with pickles, apple slices, radishes, and pickled onions. Sprinkle fresh parsley or chives over everything.
  7. Serve immediately: Enjoy while pretzels are warm and cheese is at room temperature.

Notes

For best results, let cheese come to room temperature before serving. Don’t overheat pretzels—30 seconds in the microwave is enough. Use a damp paper towel when reheating to keep pretzels soft.
