  • 1 large egg yolk
  • 1/2 teaspoon vanilla extract
  • 1/2 cup plus 1 tablespoon all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon salt (generous pinch)
  • 1/3 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Melt the butter in a microwave-safe bowl in 15-second intervals until fully melted. Let it cool for about a minute.
  3. In a medium mixing bowl, whisk together the melted butter, granulated sugar, and packed light brown sugar until smooth and slightly thickened, about 30 seconds.
  4. Add the egg yolk and vanilla extract. Whisk vigorously until the mixture is pale and creamy, about 1 minute.
  5. In a separate small bowl, whisk together the all-purpose flour, baking soda, and salt.
  6. Pour the flour mixture into the butter mixture. Fold together gently with a rubber spatula or wooden spoon just until no streaks of flour remain. Do not overmix.
  7. Fold in the chocolate chips with a few gentle strokes.
  8. Use a cookie scoop or tablespoon to drop rounded balls of dough onto the prepared baking sheet, leaving about 2 inches between each ball. Makes 6 to 8 cookies.
  9. Bake on the middle rack for 9 to 11 minutes. At 9 minutes, edges will be set and lightly golden but centers will still look soft.
  10. Let the cookies rest on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Use melted butter that has cooled slightly to avoid cooking the egg yolk. Spoon and level the flour for accuracy. The cookies will continue to set on the hot baking sheet after removal. For crispier cookies, bake for 11 minutes. For a bakery-style look, press extra chocolate chips into the tops before baking.
