Instructions

  1. Make the Blue Raspberry Syrup: In a saucepan, combine 1 cup raspberries, 1 cup sugar, and 1 cup water. Bring to a simmer over medium heat, stirring occasionally to dissolve the sugar. Let it simmer gently for about 10 minutes until the raspberries break down and the mixture thickens slightly.
  2. Strain the Syrup: Remove from heat and pour the mixture through a fine mesh strainer into a bowl, pressing the pulp to extract as much liquid as possible. Discard the seeds and solids. Add a few drops of blue food coloring until it reaches a vibrant blue shade.
  3. Cool the Syrup: Let the syrup cool completely, optionally placing it in the fridge for 20-30 minutes to speed cooling.
  4. Mix the Cocktail: In a shaker or large glass, add 2 oz vodka, 1 cup lemonade, 2 tbsp blue raspberry syrup, and juice of half a lemon. Fill with ice and stir or shake gently to combine.
  5. Serve: Fill a serving glass with ice cubes and strain the cocktail over the ice. Garnish with fresh raspberries, a lemon wheel, and a sprig of mint if desired.
