A quick and easy homemade version of the Starbucks refresher using freeze-dried fruit, sparkling water, fresh lime juice, and simple syrup for a refreshing, fruity, and fizzy drink.

  • ½ cup (75 g) freeze-dried fruit mix (strawberries, blackberries, mango)
  • 1 cup (240 ml) sparkling water (plain or lightly flavored)
  • 2 tablespoons (30 ml) fresh lime juice
  • 2 tablespoons (30 ml) simple syrup (equal parts sugar and water)
  • Ice cubes or crushed ice
  • Optional: 1 tablespoon (15 ml) green coffee extract or cold brew concentrate

Instructions

  1. Prepare simple syrup by combining ½ cup (100 g) sugar and ½ cup (120 ml) water in a small saucepan. Heat over medium, stirring until sugar dissolves completely. Remove from heat and cool.
  2. In a large glass or mason jar, add ½ cup (75 g) freeze-dried fruit mix. Pour in 2 tablespoons (30 ml) fresh lime juice and 2 tablespoons (30 ml) simple syrup. Let sit for 3-5 minutes to rehydrate the fruit.
  3. Fill the glass about halfway with ice cubes or crushed ice.
  4. Slowly add 1 cup (240 ml) sparkling water over the ice and fruit mixture to preserve fizz.
  5. If desired, add 1 tablespoon (15 ml) green coffee extract or cold brew concentrate and stir gently.
  6. Give the refresher a gentle stir to mix flavors and serve immediately. Garnish with a lime wedge or fresh mint if desired.

Notes

Do not stir vigorously to preserve carbonation. Let freeze-dried fruit soak 3-5 minutes for best flavor. Keep sparkling water chilled before mixing. Simple syrup can be made ahead and stored in the fridge for up to two weeks. Leftovers can be refrigerated up to 24 hours; re-fizz with sparkling water before serving.
