A quick and easy frozen peach bellini slushie recipe combining ripe peaches and bubbly prosecco for a refreshing summer drink that’s perfect for gatherings or solo sipping.

  • 3 medium fresh peaches, peeled and sliced
  • 1 cup frozen peach slices
  • 1 cup (240 ml) chilled prosecco
  • 2 tablespoons granulated sugar
  • 1 tablespoon fresh lemon juice
  • 1 to cups ice cubes
  • 2 tablespoons peach schnapps (optional)

Instructions

  1. Peel and slice about 3 medium fresh peaches. Toss the slices in the freezer for at least 2 hours or overnight for best results.
  2. Combine 1 cup of frozen peach slices, the fresh peach slices, 1 cup (240 ml) of chilled prosecco, 2 tablespoons of granulated sugar, and 1 tablespoon of fresh lemon juice in a high-speed blender. Optionally add 2 tablespoons of peach schnapps.
  3. Pulse the mixture on low to break up the peaches, then blend on high for about 30 seconds until smooth but still thick.
  4. Gradually add 1 to 1½ cups of ice cubes, blending between additions until the slushie reaches a thick but sippable consistency.
  5. Taste and adjust sugar if needed. If too sweet, add a squeeze more lemon juice to balance.
  6. Pour into chilled glasses, garnish with a peach slice or fresh mint if desired, and serve immediately.

Notes

Use ripe but firm peaches for best texture. Blend fruit and prosecco before adding ice to avoid watery slush. Chill glasses before serving to keep drink cold longer. For non-alcoholic version, substitute prosecco with sparkling water or peach soda. Store leftover mixture without ice in freezer up to 2 days and blend with fresh ice before serving.
