A quick and easy tropical party drink combining pineapple juice, coconut rum, and citrus for a refreshing and balanced punch perfect for casual gatherings or solo chill sessions.

  • 2 cups (480 ml) pineapple juice (fresh or canned)
  • 1 cup (240 ml) coconut rum (e.g., Malibu or Cruzan)
  • 1 cup (240 ml) orange juice
  • 1/4 cup (60 ml) freshly squeezed lime juice
  • 1/4 cup (60 ml) simple syrup (optional)
  • 1 cup (240 ml) club soda or sparkling water
  • 1 cup (150 grams) fresh pineapple chunks
  • Ice cubes

Instructions

  1. Chill pineapple juice, orange juice, and coconut rum in the fridge for at least 60 minutes.
  2. Roll limes on the counter, cut in half, and squeeze out 1/4 cup (60 ml) fresh lime juice, removing seeds.
  3. In a large pitcher or punch bowl, combine pineapple juice, coconut rum, orange juice, and lime juice. Stir gently to blend.
  4. Taste and add 1/4 cup (60 ml) simple syrup if a sweeter punch is desired. Stir until incorporated.
  5. Chill the punch mixture in the fridge for 15–20 minutes to let flavors marry.
  6. Just before serving, add 1 cup (240 ml) club soda or sparkling water and stir gently to maintain fizz.
  7. Fill glasses with ice cubes and fresh pineapple chunks. Pour punch over ice, leaving room for garnish.
  8. Garnish each glass with a lime wheel or pineapple spear and serve immediately.

Notes

Chill all liquid ingredients before mixing for best refreshment. Stir gently after adding club soda to preserve fizz. Adjust sweetness with simple syrup and balance tartness with lime juice. For non-alcoholic version, replace rum with coconut-flavored sparkling water or pineapple soda. Store punch without soda up to 24 hours; add soda just before serving.
