Refreshing Sparkling Strawberry Lemonade Recipe with Fresh Mint

A quick and easy sparkling strawberry lemonade with fresh mint, perfect for summer gatherings. This refreshing drink balances tart lemon, sweet strawberries, and minty freshness with festive bubbles.

  • 1 pound (450 g) fresh strawberries, hulled and sliced
  • 4 large fresh lemons, juiced (about 1 cup / 240 ml lemon juice)
  • 1 cup (200 g) granulated sugar
  • 1520 fresh mint leaves, bruised gently
  • 4 cups (960 ml) sparkling water, chilled
  • Ice cubes for serving
  • Optional: pinch of salt or splash of fresh lime juice

Instructions

  1. Rinse the strawberries under cold water, remove stems, and slice them roughly. Place the slices into your blender or food processor.
  2. Pulse the strawberries until you get a smooth puree, about 30-45 seconds. For less pulp, strain the puree through a fine mesh sieve into a bowl.
  3. Roll lemons on the counter to loosen juice, then cut in half and juice them with a citrus juicer to get about 1 cup (240 ml) of fresh lemon juice.
  4. In a small saucepan, combine 1 cup (200 g) granulated sugar with 1 cup (240 ml) water. Heat over medium until sugar dissolves completely, stirring occasionally. Let it cool to room temperature.
  5. Take 15-20 fresh mint leaves and gently bruise them by clapping between palms or pressing lightly with a spoon to release oils without shredding.
  6. In a large pitcher, combine the strawberry puree, lemon juice, cooled simple syrup, and bruised mint leaves. Stir gently to mix flavors.
  7. Refrigerate the mixture for at least 1 hour to let the flavors meld and the mint infuse.
  8. Just before serving, add 4 cups (960 ml) of chilled sparkling water to the pitcher. Stir gently to combine without losing fizz.
  9. Fill glasses with ice cubes and pour the sparkling strawberry lemonade over. Garnish with a sprig of fresh mint or a lemon wheel if desired.

Notes

Bruise mint leaves gently to avoid bitterness. Chill the mixture for at least 1 hour before adding sparkling water to allow flavors to meld. Add sparkling water last to preserve fizz. Adjust sweetness or tartness by adding more sugar, lemon juice, or sparkling water as preferred. For a pulp-free lemonade, strain the strawberry puree.
