Refreshing Watermelon Mojito Popsicles

These watermelon mojito popsicles combine fresh watermelon, mint, lime, and a splash of soda water for a cool, sweet, and tangy summer treat that’s easy to make and perfect for hot days.

Ingredients

  • 4 cups diced watermelon, seeds removed (about 600 grams)
  • 1520 fresh mint leaves, washed and gently torn
  • Juice of 2 limes (about 3 tablespoons)
  • 2 tablespoons granulated sugar (adjust based on watermelon sweetness)
  • 1/2 cup soda water or sparkling water (4 fl oz)
  • Optional: 1/4 cup white rum (2 fl oz) for adult version
  • Pinch of salt

Instructions

  1. Place the fresh mint leaves and granulated sugar in a bowl or the bottom of your blender. Use a muddler or the back of a wooden spoon to gently press the mint leaves, releasing their fragrant oils. This should take about 1-2 minutes. Avoid over-muddling to prevent bitterness.
  2. Cut the watermelon into small chunks, removing all seeds. Measure about 4 cups (600 grams) and add them to the blender with the muddled mint and sugar mixture.
  3. Pour in the fresh lime juice (approximately 3 tablespoons) and a pinch of salt. The salt helps brighten the flavors and balances the sweetness.
  4. Blend everything on high speed for about 30-45 seconds until you get a smooth, vibrant pink liquid. Stop and scrape down the sides if necessary to ensure even blending.
  5. Gently fold in 1/2 cup (120 ml) of soda water or sparkling water for a little fizz. If making an adult version, add 1/4 cup (60 ml) white rum here. Stir gently to combine without losing the bubbles.
  6. Carefully pour the mixture into your popsicle molds, leaving a small gap at the top for expansion. Insert sticks and place molds in the freezer.
  7. Freeze for at least 6 hours or overnight until completely solid. For best texture, avoid thawing and refreezing.
  8. To unmold, run warm water over the outside of the molds for a few seconds. Enjoy immediately.

Notes

Do not over-muddle the mint to avoid bitterness. Use ripe watermelon for natural sweetness and adjust sugar accordingly. Fold in soda water just before freezing to prevent crystallization. For chunkier texture, add small watermelon cubes to molds before freezing. Fresh lime juice is preferred over bottled for best flavor.
