  • 8 oz (225 g) fresh mozzarella balls
  • 2 medium Roma tomatoes, thinly sliced
  • About 12 fresh basil leaves
  • 2 cloves garlic, minced
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic glaze
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon dried Italian seasoning

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place each chicken breast between two sheets of plastic wrap or parchment paper and gently pound to about ½ inch (1.3 cm) thickness.
  3. Using a sharp knife, cut a horizontal pocket into the thick side of each chicken breast without cutting all the way through.
  4. Rub each breast inside and out with olive oil, salt, pepper, minced garlic, and dried Italian seasoning.
  5. Inside each pocket, layer slices of fresh mozzarella, tomato, and basil leaves (2-3 slices of each per breast).
  6. Secure the chicken pockets with toothpicks or kitchen twine to keep the filling inside.
  7. Heat 1 tablespoon olive oil in a skillet over medium-high heat and sear the stuffed chicken breasts for 3-4 minutes per side until golden brown.
  8. Transfer the skillet to the preheated oven or move chicken to a baking dish if skillet is not oven-safe.
  9. Bake for 15-20 minutes until the chicken reaches an internal temperature of 165°F (74°C).
  10. Remove chicken from oven and let rest for 5 minutes.
  11. Drizzle balsamic glaze over the chicken before serving.
  12. Serve with a sprinkle of fresh basil and optional sides like roasted vegetables or a crisp salad.
