Savory Heirloom Tomato Pie

A delicious and comforting savory pie featuring ripe heirloom tomatoes, creamy Gruyere cheese, and fresh basil in a flaky crust. Perfect for summer meals, easy to prepare, and crowd-pleasing.

  • 1 store-bought or homemade 9-inch pie crust
  • 45 medium heirloom tomatoes, sliced 1/4 inch thick
  • 1 1/2 cups shredded Gruyere cheese
  • 1/4 cup chopped fresh basil leaves
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced (optional)
  • Salt and freshly cracked black pepper, to taste
  • 1 tablespoon olive oil

Instructions

  1. Slice the heirloom tomatoes 1/4 inch thick. Lay them on paper towels or a clean kitchen towel, sprinkle lightly with salt, and let them drain for about 15 minutes. Pat dry to remove excess moisture.
  2. Preheat the oven to 375°F (190°C). Place a baking sheet on the lower rack to catch drips.
  3. Fit the pie crust into a 9-inch pie dish. Prick the bottom and sides lightly with a fork. Brush the crust with olive oil.
  4. In a medium bowl, combine mayonnaise, Dijon mustard, minced garlic (if using), chopped basil, salt, and pepper. Stir until smooth. Fold in half of the shredded Gruyere cheese.
  5. Spread a thin layer of the mayo mixture over the bottom of the crust. Layer half of the tomatoes evenly over the mayo. Spoon half of the remaining mayo mixture over the tomatoes. Repeat layering with the remaining tomatoes and mayo mixture. Sprinkle the remaining Gruyere cheese on top.
  6. Place the pie on the preheated baking sheet and bake for 40-45 minutes until the crust is golden and the cheese is bubbly and slightly browned. Cover edges with foil or a crust shield if browning too quickly.
  7. Let the pie cool for at least 15 minutes before slicing to allow the filling to set.

Notes

Draining the tomato slices before assembling is crucial to prevent a soggy crust. Brushing the crust with olive oil helps keep it crisp. Use a serrated knife for clean slices. Reheat leftovers in a 325°F oven for 10-15 minutes; avoid microwaving to maintain crust texture.
