  • 1/4 cup (85 g) pure honey
  • 4 cloves garlic, minced
  • 1/4 cup (60 ml) low sodium soy sauce
  • 2 tablespoons (30 ml) apple cider vinegar
  • 1 tablespoon (15 ml) olive oil (optional, for searing)
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon salt, or to taste
  • Pinch of red pepper flakes (optional)
  • 2 pounds (900 g) Yukon Gold or Russet potatoes, peeled and cubed
  • 4 tablespoons (60 g) unsalted butter, room temperature
  • 1/2 cup (120 ml) warmed milk or cream
  • Salt and pepper for mashed potatoes, to taste

Instructions

  1. Trim excess silver skin from the pork tenderloin and pat dry with paper towels. Season lightly with salt and pepper on all sides.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the pork tenderloin for 2-3 minutes per side until browned. (Optional but recommended.)
  3. In a mixing bowl, whisk together honey, soy sauce, minced garlic, apple cider vinegar, and red pepper flakes if using.
  4. Place the seared pork tenderloin in the slow cooker. Pour the honey garlic sauce evenly over the pork, spreading the garlic out.
  5. Cover and cook on low for 6-7 hours or on high for 3-4 hours until the pork reaches an internal temperature of 145°F (63°C) and is tender.
  6. About 30 minutes before the pork is done, bring a large pot of salted water to a boil. Add peeled and cubed potatoes and cook for 15-20 minutes until fork-tender.
  7. Drain potatoes and return to pot. Add butter and warmed milk or cream. Mash until smooth and creamy. Season with salt and pepper to taste.
  8. Remove pork from slow cooker and let rest for 5 minutes to redistribute juices.
  9. Slice pork into medallions. Spoon honey garlic sauce from the slow cooker over the slices and serve alongside mashed potatoes.

Notes

Searing the pork before slow cooking adds flavor and texture but can be skipped. Avoid burning garlic by mixing it into the sauce rather than adding raw. Check pork temperature early to avoid overcooking. Warm milk or cream before mashing potatoes to prevent gluey texture. Sauce can be thickened by simmering after cooking if too thin. For gluten-free, use tamari instead of soy sauce. Variations include adding herbs like rosemary or a spicy kick with extra red pepper flakes or sriracha.
