  • 2 cups cooked, shredded chicken (rotisserie chicken works great; about 1 large breast or 2 thighs)
  • 8 oz cream cheese, softened
  • 1/2 cup buffalo hot sauce (recommended: Frank’s RedHot)
  • 1/2 cup ranch dressing (or blue cheese dressing)
  • 1 cup shredded cheddar cheese (sharp cheddar recommended)
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup sour cream (full-fat recommended)
  • 1/4 cup cream cheese, softened (for spiderweb topping)
  • Tortilla chips, celery sticks, or crusty bread for serving
  • Optional: black food coloring for darker web effect

Instructions

  1. Preheat your oven to 375°F (190°C). Grease an 8×8 or 9×9 baking dish lightly with non-stick spray or butter.
  2. Shred the cooked chicken into small, bite-sized pieces using two forks. Aim for about 2 cups.
  3. In a medium mixing bowl, beat the 8 oz of cream cheese with a hand mixer until smooth and fluffy (about 30 seconds).
  4. Add the shredded chicken, buffalo hot sauce, ranch dressing, shredded cheddar, and shredded mozzarella to the bowl. Mix until evenly combined. The mixture should be thick and slightly sticky.
  5. Spread the dip mixture evenly into the prepared baking dish. Smooth the top with a rubber spatula.
  6. Bake for 15-18 minutes, until bubbly around the edges and golden on top. For a browner top, broil for 1-2 minutes, watching closely.
  7. While the dip bakes, make the spiderweb mixture: In a small bowl, mix the 1/2 cup sour cream with the 1/4 cup softened cream cheese until smooth. If too thick, add a teaspoon of milk; if too thin, add more cream cheese.
  8. Once the dip is out of the oven, let it cool for 2-3 minutes. Spoon the sour cream mixture into a piping bag or zip-top bag and snip off a tiny corner.
  9. Pipe a small circle in the center of the dip, then pipe concentric circles around it, spaced about an inch apart. Using a toothpick or knife, drag from the center outward through all the circles to create a web effect. Wipe the toothpick clean between each drag.
  10. Serve immediately with tortilla chips, celery sticks, or crusty bread.

Notes

Make sure cream cheese is truly softened (not cold or melted) to avoid lumps. Rotisserie chicken is a time-saver. For the spiderweb, pipe while the dip is warm (2-3 minutes after baking) for clean lines. Leftovers can be stored in an airtight container in the fridge for up to 3 days; reheat in oven at 350°F for 10 minutes or microwave in 30-second bursts. Do not freeze.
