Instructions

  1. Pat the beef brisket dry with paper towels and trim excess fat, leaving a thin layer for flavor and moisture retention. (10 minutes)
  2. Heat olive oil in a large skillet over medium-high heat. Sear the brisket on all sides until deep brown crust forms, about 3-4 minutes per side. (10-15 minutes)
  3. In a bowl, mix maple syrup, bourbon, BBQ sauce, apple cider vinegar, Worcestershire sauce, smoked paprika, black pepper, salt, and optional chili powder. Stir well. (5 minutes)
  4. Spread sliced onion and minced garlic on the bottom of the slow cooker. Place the seared brisket on top, fat side up. (5 minutes)
  5. Pour the maple bourbon BBQ sauce mixture evenly over the brisket, coating well. Do not stir. (2 minutes)
  6. Cover and cook on low for 8 to 10 hours or on high for 5 to 6 hours until meat is fork-tender and pulls apart easily.
