A simple, hands-off slow cooker recipe that yields juicy, tender chicken breasts infused with garlic herb butter for rich flavor and moist texture.

  • 4 tablespoons garlic herb butter, softened (unsalted butter mixed with minced garlic, chopped fresh parsley, thyme, and a pinch of salt)
  • 3 large garlic cloves, minced
  • 1/2 cup low sodium chicken broth (120 ml / 1/2 cup US)
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon dried Italian herbs (oregano, basil, rosemary blend)
  • Salt and freshly ground black pepper, to taste
  • Optional: pinch of red pepper flakes

Instructions

  1. In a small bowl, combine softened butter with minced garlic, chopped parsley, thyme, dried Italian herbs, salt, and pepper. Mix until well blended.
  2. Pat chicken breasts dry with paper towels to remove excess moisture.
  3. Spread about 1 tablespoon of the garlic herb butter evenly over the top of each chicken breast.
  4. Pour chicken broth and lemon juice into the bottom of the crockpot.
  5. Place the butter-coated chicken breasts into the crockpot in a single layer, buttered side up. Dollop any remaining butter mixture around the chicken.
  6. Cover and cook on low for 2.5 to 3 hours. Avoid lifting the lid during cooking.
  7. Check doneness with a meat thermometer; chicken should reach 165°F (74°C). If undercooked, cook an additional 15-20 minutes.
  8. Let chicken rest in the crockpot for 5 minutes after turning off heat before serving.

Do not overcook the chicken to avoid toughness. Use a meat thermometer to check for 165°F internal temperature. Patting chicken dry helps butter stick and improves flavor absorption. Avoid lifting the lid during cooking to maintain moisture. Optional to add fresh herb sprigs or substitute butter with olive oil for dairy-free version. Can bake in covered dish at 325°F for 25-30 minutes if no crockpot is available.
