  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ¾ cup all-purpose flour (can substitute with almond flour for gluten-free)
  • ½ cup unsweetened cocoa powder
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup semi-sweet chocolate chips
  • Optional: extra chocolate chips or chopped nuts for sprinkling on top

Instructions

  1. Preheat your oven to 350°F (175°C) and line your 8×8 inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. Grate the zucchini finely using a box grater or food processor. Gently squeeze out excess moisture with a clean kitchen towel or paper towels so it is damp but not dripping wet.
  3. Melt the butter in a microwave-safe bowl or on the stovetop until smooth. Let it cool slightly.
  4. In a large mixing bowl, combine melted butter and sugar. Stir until well blended and glossy. Add eggs one at a time, beating well after each addition, then mix in vanilla extract.
  5. In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt.
  6. Slowly fold the dry ingredients into the wet mixture gently to avoid overmixing. When almost combined, fold in grated zucchini and chocolate chips.
  7. Pour the batter into the prepared pan, spreading evenly with a spatula. Sprinkle extra chocolate chips or chopped nuts on top if desired.
  8. Bake for 30-35 minutes. Check doneness with a toothpick inserted in the center; it should come out with a few moist crumbs but not wet batter.
  9. Let brownies cool completely in the pan on a wire rack before lifting out to cut.

Finely grate zucchini to avoid visible veggie bits and ensure moist texture. Do not overmix batter after adding flour to prevent cakey brownies.
