  • 3/4 cup (150g) granulated sugar
  • 1 3/4 cups (220g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 tablespoon ground cinnamon (for the sugar crust)
  • 2 tablespoons granulated sugar (for the crust)
  • Optional: 1/2 cup chopped walnuts or pecans

Instructions

  1. Brown the Butter: Place 1/2 cup (113g) unsalted butter in a medium saucepan over medium heat. Stir constantly with a wooden spoon or whisk. After a few minutes, the butter will foam, then start to turn golden brown and smell nutty—about 4 to 5 minutes. Watch closely to avoid burning. Once browned, immediately remove from heat and let cool slightly.
  2. Preheat Oven and Prepare Pan: Heat oven to 350°F (175°C). Grease a 9×5 inch loaf pan with butter or non-stick spray, then sprinkle a little flour inside and tap out the excess.
  3. Mix Dry Ingredients: In a medium bowl, whisk together 1 3/4 cups (220g) all-purpose flour, 1 teaspoon baking soda, and 1/2 teaspoon salt. Set aside.
  4. Combine Wet Ingredients: In a large bowl, mash 3 medium ripe bananas until smooth but slightly chunky. Add cooled brown butter, 3/4 cup (150g) granulated sugar, 2 large eggs, and 1 teaspoon vanilla extract. Whisk until well combined.
  5. Fold Dry into Wet: Gradually fold dry ingredients into wet mixture using a spatula. Stop as soon as flour disappears. If using nuts, fold them in now.
  6. Prepare Cinnamon Sugar Crust: In a small bowl, combine 2 tablespoons granulated sugar and 1 tablespoon ground cinnamon. Sprinkle evenly over batter in loaf pan.
  7. Bake: Place loaf pan in preheated oven and bake for 55 to 65 minutes. Check at 55 minutes with a toothpick; it should come out with a few moist crumbs but no wet batter. Tent with foil if crust browns too quickly.
  8. Cool: Remove from oven and cool on a rack for at least 20 minutes before slicing.

Notes

Use a light-colored pan for browning butter to better see color changes. Stir constantly to avoid burning. Do not overmix batter to keep bread tender. Tent with foil if crust browns too fast. Let bread cool completely before slicing to avoid crumbling. Bananas can be ripened faster by baking at 300°F for 15 minutes.
