Wholesome Candy Corn Deviled Eggs

These Wholesome Candy Corn Deviled Eggs are a fun and healthy Halloween appetizer made with Greek yogurt instead of mayo. They are creamy, tangy, and naturally colored with turmeric and paprika for a festive candy corn look.

Ingredients

  • 6 large eggs
  • 3 tablespoons plain Greek yogurt
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon paprika
  • Salt and black pepper to taste
  • 1 tablespoon finely chopped fresh chives (optional)
  • 1/2 teaspoon paprika mixed with a pinch of cayenne (for orange tip)
  • 1/4 teaspoon ground turmeric mixed with 1 teaspoon Greek yogurt (for yellow middle section)

Instructions

  1. Boil the eggs: Place eggs in a single layer in a saucepan, cover with cold water by an inch. Bring to a rolling boil, cover, turn off heat, and let sit for exactly 10 minutes.
  2. Ice bath: Transfer eggs to a bowl of ice water and let sit for at least 5 minutes.
  3. Peel the eggs: Tap each egg to crack the shell, peel starting from the wider end under cold running water.
  4. Slice and separate: Slice each egg in half lengthwise, pop out yolks into a bowl, and arrange whites on a platter.
  5. Make the base filling: Mash yolks with a fork until crumbly. Add Greek yogurt, Dijon mustard, turmeric, paprika, salt, and pepper. Mix until smooth and creamy.
  6. Create candy corn colors: Divide filling into two bowls. In one, stir in paprika-cayenne mixture for orange. In the other, stir in turmeric-yogurt mixture for yellow.
  7. Fill the eggs: Pipe or spoon orange filling into bottom third of each egg white, then yellow filling into middle third, leaving top third white.
  8. Garnish and chill: Sprinkle paprika on orange section and chives on yellow section. Refrigerate for at least 10 minutes before serving.

Notes

For best results, use eggs that are at least a week old for easier peeling. Chill filled eggs for 20 minutes to keep candy corn colors distinct. These taste even better the next day.
