  • 2 tablespoons (30 ml) fresh lemon juice
  • 1 teaspoon (5 ml) echinacea tincture (alcohol-free preferred)
  • 1/2 cup (120 ml) filtered water

Instructions

  1. Pour 1/2 cup (120 ml) filtered water into a mixing bowl. Sprinkle 3 tablespoons (30 g) of unflavored gelatin evenly over the surface. Let it sit for 5-7 minutes until gelatin blooms and becomes spongy.
  2. In a small saucepan, combine 1 cup (240 ml) elderberry syrup, 2 tablespoons (40 g) raw honey, and 2 tablespoons (30 ml) fresh lemon juice. Warm gently over low heat, stirring occasionally until honey dissolves and mixture is warm but not boiling (about 3-4 minutes).
  3. Remove syrup mixture from heat. Quickly whisk the bloomed gelatin into the warm syrup until fully dissolved and smooth.
  4. Stir in 1 teaspoon (5 ml) echinacea tincture off heat to preserve benefits.
  5. Pour the mixture into silicone gummy molds quickly before gelatin sets (within 10-15 minutes).
  6. Refrigerate molds for at least 2 hours until gummies are soft but hold their shape.
  7. Gently unmold gummies and store in an airtight container in the refrigerator for up to 2 weeks.

Notes

Use fresh gelatin for best setting results. Do not overheat syrup to preserve nutrients. Add echinacea tincture off heat to maintain its benefits.
