Cozy Graveyard Taco Dip with Easy Sour Cream Tombstones

A warm, shareable Halloween dip with layers of refried beans, seasoned beef, creamy sour cream, and melted cheese, topped with crushed tortilla chips and piped sour cream tombstones. Perfect for spooky movie nights and parties.

  • 1 can (16 oz) refried beans
  • 2 tablespoons taco seasoning
  • 1 pound ground beef (80/20)
  • ¼ cup water
  • 1 cup sour cream (full-fat)
  • 4 oz cream cheese, softened
  • 2 cups shredded Mexican blend cheese
  • 2 cups tortilla chips, crushed
  • ½ cup black olives, sliced or chopped
  • 1 medium Roma tomato, diced
  • 34 stalks green onions, sliced
  • ¼ cup fresh cilantro, chopped (optional)
  • ½ cup sour cream (reserved for piping tombstones)

Instructions

  1. Preheat oven to 375°F (190°C). Spray a 9×13-inch baking dish with non-stick cooking spray.
  2. In a large skillet over medium-high heat, brown the ground beef, breaking it apart, for 6-8 minutes. Drain excess fat.
  3. Sprinkle taco seasoning over the beef, add ¼ cup water, stir, and simmer for 2-3 minutes until thickened.
  4. Spread refried beans evenly in the prepared baking dish.
  5. Spread the seasoned beef evenly over the refried beans.
  6. In a small bowl, combine 1 cup sour cream with softened cream cheese until smooth.
  7. Spread the sour cream mixture evenly over the beef layer.
  8. Sprinkle shredded Mexican blend cheese evenly over the sour cream layer.
  9. Bake for 15-18 minutes until cheese is melted and bubbly.
  10. While baking, crush tortilla chips in a zip-top bag with a rolling pin until coarse. Dice tomato, slice green onions, chop olives and cilantro.
  11. Let dip cool for 5 minutes, then sprinkle crushed chips, olives, tomato, green onions, and cilantro over the top.
  12. Spoon reserved ½ cup sour cream into a piping bag or zip-top bag with a small corner snipped. Pipe small rounded tombstones across the dip.
  13. Serve immediately with extra tortilla chips.

Notes

For best results, let cream cheese come to room temperature before mixing. If sour cream tombstones slide, chill dip for 10 minutes before piping. Drain beef fat thoroughly to avoid oily dip. Can be assembled up to 24 hours ahead (without chips and tombstones) and refrigerated.
